ROTA WINERY

Rota Winery is a boutique winery in the Negev desert. It is one of the single vineyard estates

planted in Halutza sand dunes along the banks of Nahal Revivim, which flows across the

Negev plateau. The farm was established in late summer 2004 by Erez Rota–artist, grower

and winemaker–and was the realization of Erez’s long-standing dream of establishing an

agricultural farm that would combine his love of agriculture, art and the Negev desert.

The winery, which was ‘born’ in 1999 in a small studio in Tel Aviv, was established in the

Negev in 2004. Remains of an ancient agricultural farm dating back to Nabatean times were

found on the site and today form an integral part of the farm’s landscape. The vineyards are

planted along the ancient terraces at a height of c. 300 m. in loess sandy soil with pebbles,

with good water absorption from drip irrigation, and runoff. Desert climate conditions–cold

and dry in winter, hot and dry in summer, along with constant breezes and cool nights–are

optimal for growing grapes.

Single Vineyard

All Rota wines are made from estate-grown varietals. The grapes are grown organically to

maintain ecological balance and the irrigation water used is desalinated seawater, transported

by pipeline from the Mediterranean. To achieve the finest quality, the vineyards are under

close and dedicated supervision. There are several parcels in the vineyard, each dedicated to a

different varietal: Cabernet Sauvignon, Merlot, Shiraz and Muscat Alexandria.

 
Winemaking

When summer arrives, grapes are harvested selectively by hand during the cool night hours.

Next, the grapes are transported to the winery for a controlled and measured process of

maceration to extract all the aroma and flavor from the skins. After a few weeks, the young

wine is transferred to French natural oak Seguin-Moreau barrels in which it will mature for

different periods depending on the type of wine. The winery produces about 10,000 bottles annually.

orroasted meat.
